You can never go wrong with a burrito, and this one is an absolute classic! Filled with brown rice, black beans, guacamole, and a dollop of hot sauce to top it all off!
Whether you choose to have it as a wholesome snack at lunchtime or a rewarding evening meal after a hard day at work, it’s sure to tick all of the boxes for flavour, texture, and satisfaction! You won’t look back once you’ve tried it!
Firstly, cook the rice as per the packet instructions, then rinse thoroughly in cold water, drain, and set aside.
Then heat the olive oil in a frying pan and once hot, add the shallots. Cook for 3-4 minutes, or until starting to soften, then add the garlic and cook for 2 minutes more, or until fragrant.
Add the black beans, tomato puree, smoked paprika, a big pinch of salt and pepper, and a splash of water and stir to combine. Simmer gently for 10 minutes or until the beans are cooked through and the sauce has thickened.
When you’re ready to assemble, soften the wraps for 10-20 seconds in the microwave. Add a layer of Holy Moly Original Guacamole to the middle of each wrap, leaving space at the top and bottom to fold over later. Add the rice, black beans, cheese, and chopped lettuce.
Fold the bottom and top of the wrap in towards the middle. While holding them down as best you can, fold the right side of the wrap over the top of the burrito ingredients and continue to roll it over to wrap everything up. Roll tightly to keep everything in place.
Finally, it’s time to cut each burrito down the middle and serve it with a dollop of hot sauce.
