This month the Holy Moly team are stepping up for a challenge...walking 70km each by the end of March.

Why 70km? Because the average person in the UK wastes around 70kg of food every year. That’s roughly 140 meals!

Reducing food waste is something high on our agenda. Our Guacamole and Smashed Avo are made at source in Mexico, meaning the skins and stones are left behind, reducing unnecessary transportation. Those leftovers are then turned into avocado oil, so nothing goes to waste.

With Food Waste Action Week and B Corp Month in full swing, we’re using this challenge to raise awareness - and funds - for our charity partner @foodetcbedford.

If the whole team reaches the 70km target by the end of March, we’ll make a donation to support Food etc’s work teaching people how to cook nutritious, affordable meals from scratch, including how to turn leftovers into something delicious instead of binning them.

This B Corp month we’re on a mission to reduce food waste 💚

Did you know that food waste in the UK is estimated to be approximately 10.2 million tonnes?! By using up leftovers and getting a bit creative with what’s in the fridge and cupboards it can help the environment as well as save you money.

Why not raid your fridge and turn any leftovers or veg past its best into something delicious? 🧑‍🍳

Ingredients
- leftover rotisserie chicken, heated in oven or microwave
- leftover rice, heated in pan with a splash of water
- peeled carrot
- charred tenderstem broccoli
- charred red onion
- tortilla wrap, cut into small pieces and baked till crispy
- topped with Holy Moly Smashed Avocado
- handful of greens of your choice
- optional: sesame seeds or chilli flakes

Quick to make and super versatile, they come together perfectly with our Nacho Chilli Cheese and fiery Three Chilli Guacamole 🌶️🥑

📌 Save this recipe for your next Iftar

💚 Slice a tortilla into 4, roll each piece into a cone, secure with a toothpick, bake for approx 5 mins at 180°C until crisp, once cooled down carefully remove the toothpicks.

💚 For the chicken filling: Toss cooked crispy chicken tenders in melted Holy Moly Nacho Chilli Cheese, add a lettuce leaf to the cone, then pile in the cheesy crispy chicken

💚 For the veggie filling: Mix up some pico de gallo - chopped tomatoes, red onion, coriander, lime, salt. Spoon it in, top with sour cream and a dollop of Holy Moly Three Chilli Guacamole

Trying the viral crispy rice salad 💚

Rainbow veggies, crispy chicken tenders, creamy dressing and perfectly ripe avocado...but wait a minute...that means finding an avocado that’s ready to go, like, now 🥑😬

Enter, our Smashed Avocado. Perfectly ripe every time with no faffing, which means you get to the eating part straight away!

Don’t forget to save this to give it a try 📌

For the crispy rice:
- spread a packet of jasmine rice on a baking sheet
- drizzle some soy, chilli oil and mix well
- spread out the rice and bake in the oven at 200 for 30 mins (till rice is brown and crisp)

For the dressing:
- 1/4 cup of Greek yoghurt
- 2 tablespoons of sweet chilli sauce
- 1tsp paprika

For the salad combine:
- sliced cucumber
- edamame
- cherry tomatoes
- rocket or spinach salad

- Add the cooked breaded chicken tenders, a few hearty dollops of Holy Moly Smashed Avocado and you’ve got yourself some feel good food

Sweet or savoury…why choose? 👀

We’ve got dinner sorted this pancake day with this stack of goodness 🥞, made even more special with our creamy Smashed Avocado 🥑

Delicious, packed with flavour and still leaves room for dessert (obviously).

📌 Save this one to give it a go

🥞 Mix pancake batter & heat a non-stick pan
🧀 Pour a little bit of the batter into pan, add cheese to the centre, cover with more batter
🥞 Cook until bubbles form, then flip, cook till golden
🥑 Top with Holy Moly Smashed Avo, fried egg + hollandaise sauce (optional: add chives, spring onions or sesame seeds)

💚 Loaded baked beef enchiladas 💚

Easy, delicious and a perfect homage to our Mexican roots these deliciously cheesy and comforting enchiladas are topped with our natural guacamole 🇲🇽

📌 Don’t forget to save this to give it a try.

For the sauce:

🥑 Fry 1 tsp olive oil with 1 tsp cumin, paprika & chilli powder, then stir in 1 tbsp of tomato paste

🥑 Add 200–250ml passata or chopped tomatoes + a splash of water or stock

🥑 Simmer 5–10 mins, season to taste

For the enchiladas:

🥑 Fry 1 diced onion & 1 diced red pepper until soft

🥑 Add 500g minced beef, cook until browned

🥑 Season with garlic, cumin, smoked paprika, chilli powder, salt + pepper

🥑 Warm the corn tortillas, fill, roll and place in an oven dish

🥑 Pour over the enchilada sauce & top with grated cheese

🥑 Bake at 180°C (fan) for 20–25 mins until bubbling

🥑 Finish by topping with Holy Moly Guacamole and some sour cream

Quick, easy and a family crowd-pleaser.

But as good as the original is, we’ve made it even better with the addition of our fiery Nacho Chilli Cheese and all-natural Guacamole. Trust us, it makes all the difference.

Save this one for busy days 👌

💚 Brown beef mince with diced onion, bell pepper, minced garlic, tomato purée, and your favourite seasonings

💚 Cut tortilla wraps in half, add a dollop of our guacamole, spoon over the beef, then top with melted Nacho Chilli Cheese (follow the instructions on pack for this)

💚 Fold into triangles, place in an oven dish, sprinkle with grated cheese (be generous if you want the cheese pull!) and dried herbs

💚 Bake at 180°C until golden and irresistibly cheesy
