Oven Baked Truffle & Parmesan Fries & Holy Moly Garlic Aioli

Holy Moly Garlic Aioli

Big fan of truffle & parmesan? Then you’ll love these oven-baked fries! Add a dollop of our garlic aioli and this will soon become your favourite go-to snack.

Serves: 2
Time: 30 minutes

Ingredients:
- To make 2 large portions of baked fries;
  - 170g Holy Moly Garlic Aioli
  - 2 large russet potatoes scrubbed, not peeled
  - 3 tsp olive oil
  - 2 tsp truffle oil
  - 2 tsp truffle salt
  - 100g grated Parmesan cheese
  - Cracked black pepper
  - Chopped parsley, chives & thyme
Method:
- 1. Preheat oven to maximum!
  2. Slice the potatoes into 1/4 inch matchsticks, or thin wedges and put them into a large bowl. Toss with the oils and salt, using your fingers to make sure all surfaces of the potatoes are evenly coated with oil.
  3. Spread the potatoes out in a single layer on a baking sheet. Cook the fries in the preheated oven for 20-30 minutes, or until crisp and golden. Turn over the fries (for an even bake) after 15 minutes of cooking. The total cooking time will depend on the size of your fries.
  4. Serve the fries piping hot garnished with cheese, salt and pepper, and herbs!
  5. Finish by serving the Holy Moly Garlic Aioli on the side for the ultimate dipping partnership!

"Very authentic. You often see flavoured mayonnaise passed off as aioli, but this is more like a traditional aioli - delicious."
