This is no ordinary avo on toast… with griddled fig slices, crumbly feta, and a drizzle of tangy balsamic glaze, you’ll be wanting to enjoy this all day, every day!

Serves: 2

Time: 15 minutes 

 

  • Ingredients:
      • Olive oil
      • 4 fresh figs, sliced vertically into rounds
      • 60g vegan feta cheese, crumbled
      • 2 tbsp balsamic glaze
      • 150g Holy Moly Breakfast Avocado 
      • 2-4 slices of sourdough
      Extras: chili flakes, black pepper, olive oil, seeds, chopped fresh coriander
  • Method:
      1. Firstly, heat a large griddle pan or frying pan with a little oil and add the fig slices. 
      2. Grill for a couple of minutes until griddle marks appear on the flesh and turn over and repeat for the second side. 
      3. Repeat this until all the figs are grilled, then remove them from the heat.
      4. Toast the bread and spread thickly with Breakfast Avocado. 
      5. Finally, top with the grilled fig slices, crumbled vegan feta, and a drizzle of balsamic glaze.
