Don’t mind us, just over here dreaming of the Mexican sunshine, making our huevos rancheros for brunch 🍳🍳🍳

Want the recipe? 👇

- in a frying pan heat a drizzle of oil, then add 3 minced cloves of garlic and 1tbsp of chilli paste
- stir for 1-2 minutes then add 1 cup of black beans and 1 cup of chopped tomatoes
- season with 1tsp of oregano, cumin and chilli and leave to simmer for 5 mins
- create small wells to crack in some eggs, then season with salt and add some chopped chilli for an extra kick 🌶️
- cover and leave to simmer for approx 5 mins (until the whites of the eggs are fully cooked)
- top with fresh coriander before serving with some tortillas, our Smashed Avocado and a squeeze of lime
