Roast Potato Hash with Sausages and Original Guacamole
The perfect brunch, lunch or dinner this moreish roast potato hash with sausages and our Original Guacamole is a great way to use up any leftover roast potatoes.
Place a large frying pan on a medium to high heat. When hot, add 1 1⁄2 tbsp oil and the sausage meat and fry until completely cooked and crisp around the edges, stirring often to prevent sticking. Remove from the pan but leave any oil.
Add remaining oil, allow the pan to heat up again, then add the potatoes, breaking into small pieces and the rosemary. Cook for 3-4 minutes, or until golden and crisp, then move the potatoes around, gently crushing them. Repeat this process till the potatoes are piping hot then add the sausages back in, season with salt and pepper and mix through. Cook for a few more minutes till everything is hot.
Remove from the pan to a serving dish, or divide between plates. Scatter parsley on top, followed by a generous serving of Guacamole
