Loaded Nachos with Guacamole

These cheesy loaded nachos can be whipped in super fast, making them perfect for a simple midweek treat. With layers of crunchy tortilla chips, punchy jalapeños, melted cheese and topped with dollops of our Guacamole you’ll be in the mood for a fiesta once you’ve served these up.

Serves: 4-6
Time: 25 minutes

 

  • Ingredients:

      • 2 bags tortilla chips, around 300-400g
      • 200g cheddar cheese, grated
      • 200g grated mozzarella
      • 1 small tin (200g) sweetcorn, drained
      • 400g tin black beans, drained
      • 100g radishes, thinly sliced
      • 100g - 200g pickled jalapeños (depending on how much heat you like!)
      • 100g sliced pickled onions or 2 spring onions, thinly sliced
      • 300g Holy Moly Guacamole
      • 200g sour cream
  • Method:
      1. Heat your oven to 180C fan / 200C non-fan / gas mark 6. Line a baking tray or ovenproof dish with baking paper and cover with a single layer of nachos. Scatter 2 handfuls of cheese on top, along with with a mix of sweetcorn and black beans.
      2. Add another single layer of nachos, cheese, sweetcorn and beans and repeat so you have 3 to 4 layers in total. Place in the oven and bake for 15-20 minutes, or until the cheese has melted and the top begins to brown.
      3. Remove from the oven and scatter the radishes, jalapeños and onions on top of the nachos. Finish by dotting spoonfuls of guacamole and sour cream over the top, but keep some back to add to the lower layers of the nachos.
