At some point during the festive period there usually comes a time when you’re in the mood for a hearty salad, particularly if you’ve got a fridge full of leftovers to use up. This leftovers salad takes some of the key players from the big day and turns them into something that little bit lighter.
Heat your oven to 180C / 350F / Gas mark 4. Place the turkey, bacon, carrots and parsnips on a tray and heat for 10-15 minutes, or until hot.
Remove from the oven and add to a large bowl, along with the cabbage. Season with salt and pepper, then add the lemon juice and oil and toss to coat. Serve on a large platter, or divide between plates, then top with guacamole.
