Mix together lemon juice, spices, garlic and plenty of salt and pepper in a bowl and stir to combine. Add the chicken and mix thoroughly. Ideally leave for 6 - 24 hours to marinate.
To cook, heat your oven to 220C/425F/Gas mark 7. Line a baking tray with greaseproof paper, then remove chicken from the fridge and pour everything onto the tray. Make sure all the chicken is skin side up, separated and flat(if possible). Roast for 30 minutes, till golden on top, checking it’s cooked in the centre.
Divide Original Hummus between plates and serve the chicken on top, along with any juices, alongside salad, flatbreads and yoghurt.
