Beef Burger with Nacho Chilli Cheese and Guacamole
This is nacho your average burger! A beef patty topped with crispy blackened onions, oozy Nacho Chilli Cheese and Guacamole is an absolute winner for a weekend treat.
Peel and thinly slice the onions. Place a frying pan on a medium to high heat and when hot, add the sunflower oil and the onions. Season with salt and cook, stirring frequently for 10 minutes, till the onions are soft, brown and beginning to blacken at the edges.
Add the butter, which will melt quickly and begin to burn, and stir constantly for another 2-3 minutes. Remove the onions to a plate with kitchen paper.
Wipe the pan clean with paper, then place back on a medium to high heat and when hot, add the burgers. Season generously with salt and cook for 3-4 minutes on each side, so the burgers have lots of colour and feel firm in the centre. Remove to a plate and allow to rest for 5 minutes. Wipe the pan clean and place the cut side of the brioche buns into the pan to warm through.
Heat the Nacho Chilli Cheese in the microwave as per the instructions on the cardboard sleeve. Be careful, it'll be really hot once heated.
To assemble the burgers, divide the guacamole between the base of each bun and top with the iceberg lettuce and a burger. Add the caramelised onions then drizzle Nacho Chilli Cheese on top. Finish with the pickled gherkins and the brioche bun top.
