Fire up the BBQ for these juicy chicken skewers drizzled with our Italian-Style Salsa Verde.
The zesty blend of herbs and garlic adds a bold kick and punchy flavour. Quick to cook and bursting with taste, they’re perfect for effortless outdoor dining.
Serves: 4
1. Cut the chicken breasts or thighs into large 3-4 cm chunks and place in a large bowl.
2. Finely chop the garlic, or push through a press and add to the chicken along with the olive oil, a decent amount of salt and pepper and lemon zest. Stir to combine and coat thoroughly and ideally leave to marinate for a few hours, but don’t worry if you can’t.
3. If using wooden skewers, soak for 30 minutes before using. Thread the chicken onto 4 skewers, keeping the pieces tightly pushed together.
4. Light your BBQ and once the coals are white, place the skewers on the grill to cook, turn every few minutes, till they’re golden all over, blackened at the edges and cooked in the centre, around 15 minutes in total.
5. If you’re not using a BBQ, set your grill to high heat and place the skewers on a rack, on top of a tray. Grill for around 15 minutes in total, turning 2 - 3 times.
6. When serving, drizzle each skewer with plenty of Salsa Verde.
