Say hello to your new go-to dinner! This flavour-packed tray bake combines juicy chicken, roasted sweet potatoes, and caramelised red onions – all brought to life with our Miso & Soy.
Sweet, savoury and irresistibly delicious, it’s a one-pan wonder! For extra flavour we recommend marinating the chicken in Miso & Soy for a couple of hours before you start cooking.
Serves: 4
4 chicken legs, cut into drumsticks and thighs
80g pot Holy Moly Miso & Soy
3 to 4 sweet potatoes (around 750g total)
2 - 3 red onions
Salt and pepper
1 tbsp olive/sunflower oil
1. Heat your oven to 180C fan / 200C non-fan / gas mark 6.
2. In a bowl, mix the chicken with 1 tbsp Miso & Soy and if you have time, leave to marinate for a few hours or overnight.
3. Cut the sweet potatoes into 2cm thick rounds. Peel and cut each onion into 8 wedges. Combine both of these in a bowl, add the oil, season with salt and pepper and toss to coat.
4. Line a large baking tray or dish with baking paper, arrange the potatoes on the base, followed by the onions. Place the chicken on top, along with any excess marinade.
5. Place in the oven and roast for around 1 hour, until the chicken is tender and the potatoes are soft and caramelising around the edges.
6. Remove from the oven and allow to rest for 10 minutes. Just before serving, drizzle the remaining Miso & Soy over everything.
