These bite-sized potato dumplings are the ultimate comfort food; crisp on the outside, pillowy soft on the inside and covered in our Margherita Cheese. This dish is rich with cheddar and mozzarella, creamy with rich tomato and punchy with garlic, basil and oregano – heavenly.
Place a large frying pan on a medium to high heat and when hot, add the olive oil. Swirl to coat the pan then add the gnocchi.
Cook for a few minutes then use a spoon to turn them over. If the gnocchi are going dark brown turn the heat down. Continue to cook till the gnocchi are golden and crisp all over and soft in the middle. Season with salt.
Turn the heat down, then add the Margherita Cheese and stir until it has completely melted. Toss the gnocchi in the cheese till they are completely coated. If the sauce becomes too thick, add a splash of water to loosen. Divide between plates and top with black pepper and if using, walnuts.
