One for all your future BBQs! This Jerk Chicken recipe is surprisingly easy to make and has a heavenly balance of sweet and spicy when complemented with Holy Moly Original Guacamole and our sweet and tangy Tomato & Mango Salsa. Super easy and relaxed, with no compromise on taste and with 100% natural ingredients – to be enjoyed come rain or shine!

Serves: 3-4
Time: marinate overnight, and cook for 55 minutes

Ingredients:
- - 1kg of chicken legs or thighs, with skin
  - 1 lime, juiced
  - 1 scotch bonnet chili
  - 1 medium onion, finely chopped
  - 1 tbsp honey
  - 1 tbsp soy sauce
  - 1 tbsp oil
  - Thumb size portion of ginger, chopped
  - Large handful of spring onions
  - 2x cloves of garlic
  - 1 tbsp ground allspice
  - 1 tsp salt
  Serve with creamy Holy Moly Original Guacamole and Holy Moly Tomato & Mango Salsa, and a wedge of lime.
Method:
- 1. To begin, blitz all the ingredients above in a food processor to form a thick marinade paste.
  2. Slash the surface of chicken legs/thighs a few times and rub the marinade all over. Cover and let this marinate for at least 2 hours, preferably overnight.
  3. Preheat an oven to 180°C and place the chicken pieces on a baking tray, bake for 40 mins.
  4. Turn the oven to grill setting for the last 10-15 mins, to colour the skin for that charred look. Grill some corn along with the chicken if you’d like.
  5. While the chicken cooks, make the rice with red kidney beans, and also the Tomato & Mango Salsa for sides.
